Potato Gnocchi

Potato Gnocchi with Caramelized Onions, Bacon, Sage and Fresh Herbs in Garlic and Olive Oil

Ingredients:

2 cloves garlic
half an onion sliced and browned in oil
3 sage leaves
1 ounce diced bacon
chopped parsley
3 ounces of veg or chicken stock
salt and pepper
150 grams of potato gnocchi
I block of Parmigiano Reggiano

 

Instructions:

Lightly sautee sliced garlic in oil, when slightly browned add bacon. Sautee bacon until fat is rendered out, then add caramelized onions and sage. Sweat the ingredients for about 1 minute, then add veg or chicken stock. Simmer until lightly thickened, add salt and pepper to taste and parsley, remove from heat. Drop potato gnocchi in slated boiling water stirring gently until they rise. Drain the gnocchi and put the sauce back on the heat. Place gnocchi in the sauce and toss until the sauce coats the gnocchi.
Plate gnocchi gently and add shavings of the Parmigiano on top to garnish. Serve immediately.
