The Hamburger Bun Vanilla Cake

The 'Hamburger Bun' Vanilla Cake

2 cups sugar
4 eggs
2 1/2 cups all-purpose flour
1 cup milk
3/4 cup vegetable oil
2 1/4 teaspoons baking powder
1 teaspoon vanilla 

Preheat oven to 350°F.
Line one 9-inch round cake pan with parchment paper. Grease the sides of the pan well.

In a large mixing bowl, using an electric mixer, beat sugar and eggs together until slightly thickened, about 1 minute. Slowly add in flour, milk, oil, baking powder, and vanilla and beat for another minute, just until the batter is smooth and creamy. Do not over mix. Pour batter into the prepared baking pans.

Bake in preheated oven for 20-30 minutes or until the tops are golden and a toothpick poked into the center of the layer comes out clean. Let cool in pan for 5-10 minutes. Loosen the sides of the cake from the pan with a thin knife, turn out onto a rack and peel off the paper. Let cool completely before covering in butter cream.

The 'Burger' Chocolate Cake Recipe

1/2 cup cocoa powder
1/4 cup hot water
1/4 cup milk
4 tablespoons butter
1 cup sugar
1 egg yolk
1 cup flour
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda

Preheat oven to 350°F.
Line one 9-inch round cake pan with parchment paper. Grease the sides of the pan well. 

Mix cocoa powder with hot water, until dissolved. Add Milk.

In a separate bowl combine flour, salt and baking soda. Mix well and set aside.

Beat butter and sugar for one minute, add egg yolk and beat until incorporated. Stir in vanilla and remaining ingredients. Mix for one minute. Pour batter into the prepared baking pans.

Bake in preheated oven for 20-30 minutes or until a toothpick poked into the center of the layer comes out clean. Let cool in pan for 5-10 minutes. Loosen the sides of the cake from the pan with a thin knife, turn out onto a rack and peel off the paper. Let cool completely before covering in ganache.

Ganache Recipe

1/2 cup 35% cream

1/2 cup dark chocolate (coarsely chopped)

In a small pot, bring cream to a boil. Watch closely, cream can burn quickly. When the cream starts to boil, add all of the chocolate. Stir mixture until chocolate is melted and the texture is smooth. Let cool for 1-2 hours.

Simple Syrup Recipe

1 cup water

1 cup sugar

Pour all ingredients into a small pot, bring to a boil, stirring regularly. Remove from heat and cool.

Butter Cream Recipe

4 medium egg whites

250g sugar

250g unsalted butter,softened

A few drops of vanilla extract

In a stainless steel bowl, add eggs and sugar. Whisk mixture over a pot of boiling water until warm and sugar has completely dissolved. Do not over heat or you will cook your eggs. Whisk on high speed until mixture has thickened, grown in volume, and is no longer warm. Add small pieces of butter on low speed. When butter is completely incorporated whisk at high speed. Don't be alarmed when your butter cream appears to be curdled, continue mixing at high speed until smooth and fluffy. Add vanilla and mix. Use as desired and store in fridge.
